happy summer friends!
i can't believe it's already august. where has the time gone?! i remember my parents repeating this phrase over + over when I was growing up + it usually prompted some serious eye rolls on my end. "silly parents - don't you know that time is dragging by? this must just be something that old people say". well folks, if i'm going by my ten year old life theology, then i've officially gotten old.
summer feels like the best + worst thing these days in the bridges household. the hardest part is that everyday feels like it should be a lake day NOT a work day when the temps are this high (remember the gold old days of summer vacation?!). but i do love that weekends by the pool have become a regular occurrence and homemade salsa is a staple on the kitchen counter. i love that friends wander in on weeknights and we're trying to get our butts down to the beach as often as possible. there's something slow and beautiful about this time of year, probably because everybody is doing their absolute best not to melt outside like a popsicle.
one place that IS cool is the grocery store. and i bet last time you visited, you noticed that those glorious little things called peaches are back in season and gracing the grocery store aisles. grant + i are obsessed, because nothing quite says summer like a juicy ripe peach. we eat them beachside, on the patio under the bistro lights as a post-work snack, and during lunch time with juice spilling everywhere.
as mentioned above, this time of year seems to instigate impromptu get togethers left and right (my favorite kind!) and having something easy + sweet on hand when that happens feels right every time. enter the PEACH berry crisp. you guys, i am not joking when i say that this is THE EASIEST way to impress your people with a perfect summer treat without really doing any hard work. BOOM WHAT COULD BE BETTER THAN THAT?!
special blessings + thanks to my girl shauna niequist for providing the bones of this simple and delicious life saver recipe. because now when people wander through the door unannounced for a summer evening together, they think i'm a rockstar. and my FAVORITE thing to do is say YOU GUYS BUT REALLY I BARELY DID ANYTHING IT ONLY TAKES LIKE TEN MINUTES AND YOU CAN BE A ROCKSTAR TOO. secret spoiled. my sweet + incredibly talented friend taylor souza joined in to snap some pics and show you guys the step by step of how this baby actually comes together. and to enjoy the treats of course.so without further ado, read on for your new go-to summer dessert to serve any time of day.
to get you started you'll need:
- 1 cup blueberries
- 1 cup rasberries
- 1 bag frozen peaches
- 1 cup old fashioned oats
- ½ cup walnuts (or almonds. OR sunflower seeds. really feel free to throw whatever nut you have in your pantry into this sucker.)
- ½ cup almond meal
- ¼ cup maple syrup
- ¼ cup olive oil (or coconut oil)
now to make the magic happen:
pour the berries into a baking dish. you can do one big dish or individual ramekins for guests. top the berries with peaches. in a separate bowl, mix the remaining ingredients with a fork, and then pour it over the berries. bake at 350°F for 30-40 minutes, or until just a little brown. if you’re waiting for a deep rich brown, you’ll be waiting forever, so just pull it out when the fruit is bubbling and there’s a little golden color on the crisp. the bubbling fruit will really be your telltale sign that this delicious treat is ready for EATING.
pull the crisp out of the oven, let cool for just a few minutes, and serve warm. if you made a big batch, spoon some onto individual plates. TIP: adding ice cream to the mix is always a hit. there you go! you've done it! easy peasy summer peachy. happy summer!
